The Stuff That Chicken Soup Is Made Of

It is a homemade chicken soup day today, as cool April showers water the earth. This spring keeps blowing in drastic changes in the air, with temperatures climbing into the 70’s and then dip down to the 30’s within hours of each other. Storms and tornadoes become a regular springtime threat in Missouri. This year it is flash flood warnings, and now the mighty Mississippi is cresting in some small local rivertowns. One of my favorite comfort foods is homemade chicken soup. During cold and/or rainy weather, nothing beats the aroma in the kitchen and flavor at mealtime.
My homemade chicken soup recipe includes fresh chicken and vegetable stock, herbs, and garlic are key. Organic brings out the flavors. It’s clean, no artifical product to dull the tastes. I roasted a chicken fryer for our Sunday dinner with plans to use the leftovers later. I simply put a fryer in the crockpot, added no-salt lemon pepper, a pinch of kosher salt, fresh thyme, and 32 oz organic vegetable broth. This slow-cooked for 8 hours while working at the spice shoppe. Sometimes I use a different herb mixture such as herbs de provence or an Italian blend. After our Sunday dinner, I diced 2 celery ribs and 2 carrots, minced 2 garlic cloves, and added to the existing stock from the roasted chicken. This time it is chicken-rice soup, so I added a 1/2 cup of brown rice. (If it is chicken-noodle soup, I add rice, gluten-free noodles.) I cooked for about 30 minutes on the stovetop. Then I added more vegetable broth and the leftover chicken chunks. The soup pot is in the fridge for lunches and future dinners. This is what we will have for dinner tonight. Steaming hot soup and a warm French baquette! Ummmmm!

A Weekend Day In My Life

My weekend is somewhat different. I am not focused on employee wellness, but plant wellness! I want to share another small collection of words and larger collection photos to describe my other life. To simply say “green” describes my weekend day. “Green plants” to be exact. I love plants. I grew up with them, and cannot live without them. A few other essentials are identifying bugs; a walk to the greenhouse over the creek after visiting at the barn with the farm neighbors; herbs to make my dishes taste delicious; and lemonade, to make life sweet!

Dependents

Spiral Herb GardenThe tax year of 2012 Dean and I both did not claim one of our six children as a tax dependent. It has been years for either of us since this has occurred. They are all grown up! According to our accountant, our tax deductions came from our greenhouse business this year, not our children. We took a loss this tax year, as last year. Greenhouse rebuilds are costly and timely. An expensive hobby rather than a business, maybe? I’d rather be playing in the dirt and planting green things for my eye palette or taste palette than gambling at the casino, perusing the neighborhood bars, or loafing on the couch. We have a hefty tax return coming which will in turn be reinvested into Deanna Greens And Garden Art. Electric for our structure is around the corner, with propane and solar heat as the next big investments.
I never viewed our Deanna Greens And Garden Art plants as dependents, but that is what they are. And they depend on us to thrive in this world. Water, food, and light on a regular basis, and Mother Nature does her part. I am so anxious for the weather to warm up enough to get our plants under the shelter of our unheated greenhouse. The plant lights in the garages have done good, but the natural sunlight is what the plants need to get greener, fuller, and growing with such vigor. Rain water (or snow in our case!) catching in the rain barrels will provide more minerals for our plants. After a few weeks in the greenhouse, the plants will be moved to the screenhouse to avoid scorching this summer. That scenario seems so far away. We are still under normal temperatures for March. Come on Spring, we need you!
Planning out the growing and market season, Dean and I will have some annual flowers such as marigolds, zinnias, and wildflower mixes. Marigolds are a great natural insect repellant for your vegetable garden and patio area. Zinnias and wildflowers make beautiful summer bouquets. Organic herbs such as basil, thyme, sage, chives, and nastrium will be sold live in pots of various sizes. We will make some potted herb gardens. Garden spoon signs and homemade lavendar soap will be brought to the farmers’ markets. I will design some relic stepping stones and have them ready for market on Mother’s Day weekend. And then there are houseplants, with succulents as our specialty plant. Currently, we are in search for unique pots to divide and transplant our huge succulents into. We hope to plant some vegetables for our consumption. Any leftovers will be frozen or stored for next winter’s pastas, stews, and soups. Pasta Primavera

Pasta Primavera
According to my culinary book Food Lover’s Companion, primavera alla [pree-muh-VEHR-uhl] is the Italian phrase which means “spring style”. The Italian dish pasta primavera is an example of this culinary style. Fresh vegetables, are diced or julienne cut either raw, blanched, or lightly sauteed and added to al denta pasta tossed with olive oil and parmigiano-reggiano [pahr-muh-ZHAH-noh reh-zhee-AH-noh], Italy’s premier parmesan cheese. Well, this evening was my turn to cook dinner, as Chef Mick was off with his family with other dinner plans. I thought to make a fresh arugula pizza, but did not have any flour in the house. My low-gluten diet. One way or another I was using the organic baby arugula mix I bought at the store yesterday. Store-bought is not quite as tasteful as the home grown variety, but arugula’s destinctive flavor is what I craved, if you can tell by my previous blog. Spring fever has offically hit! I found a box of multi-grain penne, so I prepared them al dente. My kitchen’s vegetables on hand were lightly sauteed in 2 teaspoons of olive oil + 1 teaspoon of vegetable oil. So here are the ingredients found in Anna Marie’s Pasta Primavera made tonight:
2 Deanna Greens And Garden Art dried jalapeno peppers, hydrated and chopped finely
1/2 cup yellow squash chunks
1/2 cup zucchini squash chunks
3 large button mushrooms, chopped in chunks
1/4 cup fresh baby arugula leaves
1-1/2 teaspoon dried basil leaves
1/2 teaspoon garlic powder
1/4 teaspoon Kosher salt
1/3 cup petite cut tomatoes
1/3 cup + shredded Italian cheese blend
10 oz penne pasta, cooked al dente, drained, coated with 1 teaspoon olive oil

Here are the recipe instructions:
1. Heat both oils in a medium skillet.
2. Add the finely chopped jalepeno peppers to the heated oil; saute for 30 seconds.
3. Add both squash and mushroom chunks to the skillet; saute 3 minutes.
4. Toss in arugula; stir to coat with oil.
5. Toss in basil, garlic powder, and salt; stir.
6. Stir in tomatoes and 1/3 cup cheese.
7. Toss saute vegetables with al dente pasta.
8. Pour into bowls; garnish with additional shredded cheese, if desired.

Sure savored every bite of this dish. Buonanotte!

Are You A Locavore?

Are you a locavore? Congratulations, if you! Others may be asking, “what is a locavore?” Here is the paraphrased dictionary definition to this 3-year old word: One who eats local foods whenever possible, typically foods grown, raised, and produced within the consumer’s 100-mile radius. I am a locavore. And whenever possible I shop local for most of my other consumer needs. So what are the top 5 reasons to buy local foods and goods? #1 You boost the local economy. #2 You know the integrity of the product you are buying, if you know the farmer or producer. #3 With most foods, you will have a longer shelf life. #4 With herbs, vegetables, and fruits, you know the produce was harvested within a day or two for better nutritional value, not weeks or months ago. #5 You have encouraged “green practices” with less fuel usage with less travel of the product.
For me, it is all about the food! One of my many passwords is “arugula4me”. Each time I enter this password, it reminds of the fresh arugula that will come from Deanna Greens And Garden Art 1/4 acre plot at Boone Hollow Farm in a few short days. I am salivating just writing about it! Dean loves the way the word “arruugulaa” rolls off my tongue, the only time I sound like I am from Italy. Do you have a farmers’ market in your neighborhood? White Lace and Orange Zest

This weekend hibernation has been good for my tummy and soul. Comfort foods made at a slow pace, slow food is the best. Homemade smoky potato soup last night. White lace (sugar) and orange zest dusted over orangy-oat french toast this morning. (We have to do something with all the milk, bread, and eggs we bought with the earlier weather forecast grocery store stops!) Toasted marshmallows and hot chocolate while warming next to the kitchen fire. My soul has been fed sitting at the windows and watching the birds. My vitamin D quotas should be met with the sunrays and my daily glass of milk.
My eyeballs have been on Deanna Greens And Garden Art paperwork each morning of this 3-day weekend. I compiled receipts and sales sheets, and entered onto spreadsheets for our tax preparer. No financial profit in 2012 year, as we anticipated with the greenhouse move, redesign, and reconstruction. The 2013 budget includes the electric installation. Yes, we will finally have electric in the greenhouse. We found a licensed electrician who will install at 1/5 the price the local electric company quoted us. Electric will be used for lighting and circulation fans. Heating may come, depends on the sales this year. If not this year, maybe in 2014. We will incorporate solar and propane to heat the greenhouse. Did I tell you that we have redesigned our structure to be 650 square-foot of greenhouse and other 650 square-foot to be a screenhouse? The greenhouse side will be used to start seedlings, propagate, and grow our perennials. The screenhouse side will be our vegetables and herbs for personal and market purposes.
Body and soul profit is another thing. Hands in the dirt, heart growing along with the green plants. Character and friendships blooming during this journey.
My body and soul has called me to a walk today. I will exercise my leg and arm muscles while walking Midnight, our dog. It will be a brisk walk, as the snow remains with the cold air. This winter hibernation may be ending this afternoon, only for another impending snow storm tomorrow night.

Your Fence or Wall?

Fence
Robert Frost wrote a poem called “Mending Wall”.
Something there is that doesn’t love a wall,
That sends the frozen-ground-swell under it,
And spills the upper boulders in the sun;
And makes gaps even two can pass abreast.
The work of hunters is another thing:
I have come after them and made repair
Where they have left not one stone on stone,
But they would have the rabbit out of hiding,
To please the yelping dogs. The gaps I mean,
No one has seen them made or heard them made,
But at spring mending-time we find them there.
I let my neighbor know beyond the hill;
And on a day we meet to walk the line
And set the wall between us once again.
We keep the wall between us as we go.
To each the boulders that have fallen to each.

This poem says much, which can be condensed with the old Czech saying, “Do not protect yourself by a fence, but rather by your friends.” I would rather have friends than fences and walls, wouldn’t you? So much strife and bitterness amongst people, and the violence is horrible. Dean & I have a place we go where fences are not necessary, except clever ones to keep the deer out. It is Boone Hollow Farm in Defiance, Missouri. It is where our greenhouse takes home. There are no fences or walls to divide the lots between tenants, we each just know where our own spot begins and ends. Even our dog, Midnight knows. Caring and sharing is the attitude, so refreshing. I anticipate a great growing season, growing herbs and vegetables as well as friendships in this community.

Colder Than Cold But With Style

I have the craziest allergy that makes winter quite the challenge. I am allergic to the cold. Cold air, cold water … It makes the winter feel like colder than cold. I wear my “Ivana hat” (see my previous post “Winter’s Chill” about this), gloves, scarf, tights or pantyhose under my slacks or jeans, socks, boots, and layered coats. I need a ski mask to completely cover my face, just holes for my eyes and nostrils. I have been itching all day and puffy with hives this cold Monday. Construction is underway in my work building, so heat is limited. Space heaters have been provided, but the radiator heat is much more efficient. Benadryl makes me wiry and irritable, so I limit its usage to more severe swelling. And an epie pin is kept in an emergency bag in our 18-passenger van or with me when I go swimming or camping just in case. Yes, I have the angiodema as well as the hives, swelling from the inside out. The weather changed again on Saturday. I loved the sunshine and 60 degree temperatures all day Friday and Saturday morning, and then it turned on us late afternoon on Saturday. Ice and snow, and those wind chills! Yes, it is January in Missouri, but love those thawing days. Saturday morning Dean worked on the screen for the back side of the greenhouse and the back door header. And I put my seamstress skills into use by tacking nails in between Dean’s original nailing to make such a neat pattern like the brass studded french seam of a denim jacket or a pair of cowboy/cowgirl jeans. FrenchSeamStuddedJeans Have to make the plastic liner more secure, yet fashionable, don’t you think?! Only a woman’s touch! While we are preparing the outer wear for our plants, they are currently housed in two semi-heated, artificially lit 2-car garages. The warm comfort of their heated greenhouse is long gone, though spring is about 2 months away. The perennials are green, yet somewhat dormant. Trimming and propagating will take place in 4 weeks. Bed designs are being decided along with seeds being ordered this week for the herbs and veggies. In about 4 -6 weeks we will be sowing. Dormancy fools you. While we think nothing is going on; really, life is continuing and a blossom and fruit will appear soon enough.

Changes

Mick's Tamales Changes! Isn’t that a song? It is as the saying goes “here to stay!” This week my friend Molly from EarthDance Farms shared a few words about change in her newsletter. Farming wallows in change. Our greenhouse plans definitely have! Here is a link to that EarthDance Farm publication: http://hosted.verticalresponse.com/463715/e828cdbee3/1696501412/351023b5d5/. We can chose to embrace change or fight against it, and I chose to embrace it. The autumn winds, modified greenhouse designs, the death of my father, and the holidays are followed with new housing arrangements for Dean & I. The desire for a different life brought my oldest daughter and her family to our household. We are sharing our modest 3-bedroom home with 2 more adults, 3 young children, and another black lab. My father’s lab “Midnight” who we adopted on Christmas Day loves all the companionship! An adjustment for my hubby and I, young children near our feet and squeals galore. It makes for creative date nights out for us previous “empty nesters”. Rachel and Mick have a plan, to save for their own 4-walls in the countryside where their chickens and lambs will meander nearby, and a garden big enough to feed themselves and Mick’s catering clients. Mick creates these fabulous meals which are on the healthy side now. I think his mother-in-law had some influence there! Shhh! Roasted two-beet salad with goat cheese crumbles … fresh, handmade pork tamales, and that leftover pork came from his New Year’s pig roast, all on our home kitchen’s menu! Yummy! Herbs used from Deanna Greens and Garden Art, and more to come this upcoming growing season. A new opportunity is just around the corner for my son-in-law chef. And faith plays a part in change. When we expect, it happens. God is not always in the door we open, but in the hallway as my artistic son, Ben mentioned on his FB page this week. And there is an opportunity waiting for my son as well. God embraces us wherever we are. What changes are you encountering right now? And what changes are you waiting for? Apply faith and good works. The Alternative

So much of our thinking and planning seems to align to conventional practices.  This is in every area of our lives, relationships, career paths, foods we eat, medicines we take, what we spend time with or on, the house we live in, so on and so on.  Break throughs in sciences seem to tell us that some old practices have been the best practices all along.  For instance, the present interstate highway system we have has caused major traffic congestion in the cities, and kept local commerce from growing.  The lecture I attended at Washington University last week where  John Norquist gave the alternative.  Tear down some of those interstates in the city.  Allow secondary arteries, the urban streets to be available for travelers to slow down and visit the city, create more jobs, circulate more commerce, allow pride in the citizens to show off their cultures.   Maybe more walking and biking will be encouraged with sidewalk systems.  Hooray for out-of-the box thinkers!  St. Louis City and County are looking into this option.  What do Milwaukee citizens think about the similar project that took place in their city? 

Then there is the Slow Food movement.   (There is that word “slow” again.)  This started in Europe, Rome, Italy to be exact as a direct statement to the fast food construction plans for a McDonald’s back in 1986.  According to founder and president Carlo Petrini, “everyone has the right to good, clean, and fair food”. That means quality, flavorful food, it is natural form, and produced and tranported in an ethical manner at a fair price.  A person who eats locally, is called a locavore.  Slow Food includes local food.  (There is that word “local” once again.)  Foods grown, produced, and consumed on a local level will support local folks, right?  So this is where Deanna Greens And Garden Art resides.  Local!!!  I cannot wait to get those beds raised and plant some organic seeds for herbs and veggies.  We hope to sell more seedlings to local farmers, and herbs to local farmer’s market folks next spring.  And Dean & I will consume lots of our own homegrown veggies.  Veggies are the alternative to pre-packaged, processed grain products.  Herbs are the alternative to salt and synthetic chemicals the food label lists.  Check out the book Wheat Belly by Dr. William Davis from your local library and see what today’s wheat and corn are doing to our bodies.  Or Dr. Davis has his own blog:  www.wheatbellyblog.com.   An eye opener.  Yes, an alternative diet, yet what we ate like before WWII.  Old practices return.

Dean and I personally shop local as well.  95% of our Christmas gifts are bought locally.  Wine from Chandler Hill Vineyards and foods & crafts from local artisans.  I hope you supported Local Saturday in your community a couple of weeks ago.   Last weekend we slowed our pace down, savored a local beer and satisfied our palettes while listening to local music at our neighborhood joint, the St. Charles Coffee House.     www.saintcharlescoffeehouse.com.   What is your favorite local eatery?  In our travels, Dean & I look for those local joints, and we may visit yours!
